Luby's Inc. today announced the opening of its new prototype restaurant in Cypress, TX. This opening marks the first new restaurant for Luby's in more than seven years.
"The opening of the first next generation Luby's cafeteria makes this an exciting time for our customers and our organization," said Chris Pappas, President and CEO. "This new prototype will allow us to grow our brand by capitalizing on Luby's core fundamentals of serving great food made from scratch and a convenient delivery system."
The new Luby's prototype elevates the cafeteria experience with an upscale design and open floor plan. The restaurant's exterior incorporates limestone, wood and stucco to invoke the appeal of the Texas Hill Country. A vaulted entrance guides customers through the center of the dining room to the serving line. An open-view kitchen provides enhanced visibility and ambiance, while oversized windows surrounding the dining room present an abundance of natural light. This next generation cafeteria offers a more contemporary look and feel with upscale features that include granite surfaces, exposed wood ceilings, terrazzo floors and cherry wood walls. The restaurant also features a covered seating area on the outdoor patio.
The new prototype provides enhanced food presentation with a granite serving line, new chilled salad display case and comfortable, attractive booths and furniture. The restaurant includes a dining counter with flat screen televisions and bar-style seating to accommodate single diners. The dining counter also serves as a dessert and specialty coffee bar, offering fresh brewed coffees, cappuccinos, espressos and iced coffees as well as milk shakes and ice cream. The food to-go area has been improved allowing for curbside pickup, with a side entrance and direct access to the dining room and bar area.
"In 2008 we plan to build four to six stores using the new prototype. Working at a disciplined and progressive pace, we expect to build 45 to 50 new stores over the next five years. Initially we plan to build out our markets in Texas, but also could extend to markets outside the state that will support our concept and brand. As we have previously said, our goal for new stores is to outperform the company average unit volume and generate a store-level cash flow return on sales of 15 to 20 percent. We believe the expansion of new stores will generate favorable unit sales and strong returns on investment creating attractive long-term growth for Luby's shareholders," said Mr. Pappas.
